ASIAN BBQ DUCK DEEP DISH PIZZA

 

INGREDIENTS

2                                    roasted duck breasts

1 ea                               sliced red onion

1 ea                               sliced red pepper

½ bunch                        cilantro

½ head                          julienned napa cabbage

1 ea                               carrot, julienned

BBQ SAUCE

½ cup                            sweet soy

¼ cup                             ketchup

1 tsp                              ginger on micro plane

2                                    oranges, juiced and zested

½ clove                         garlic, juiced

1 tsp                              siracha sauce

1 cup                              cheddar, mild

 

METHOD

Place all ingredients in a pot, boil, simmer for 5 minutes and remove.

 

Render skin from duck breasts, cook duck to medium rare and let rest

 

Sauté vegetables together in sesame oil.  Slice duck very thin.  Mix with vegetables once cool.  Add BBQ sauce, add chiffonade of cilantro and mix in cheese.

 

Bake crust at 550 degrees until golden.  Add vegetable/duck mix and bake 5-10 minutes.  Top with more cilantro and toasted sesame seeds.
