RED CABBAGE AND APPLE SLAW

 

INGREDIENTS

1 ea                               minced shallot

½ tsp                                      Dijon

1 tsp                              sea salt

1 tsp                              horseradish

¼ - ½ cup                     cider vinegar

1 – 2 tsp                        sugar

1 ea                               orange, zested on micro plane

 

METHOD

Mix together in a large bowl and let sit for 20 minutes.

 

½ head                          red cabbage, shaved

2                                    granny smith apples, julienned

2                                    carrots, julienned

1 small                           red onion, shaved

1 bunch                          scallions, sliced into thin rings

½ bunch                        cilantro, chiffonade

 

METHOD

-          Put the cabbage into the liquid and let sit for 20 more minutes.

-          Then add the rest of the ingredients and mix together.  Add 1-2 tsp’s mayo and season with salt.
