1 # fresh, dry packed scallops, cleaned and diced to about 1/2" big
1 red bell pepper, diced
1/2 red onion, diced small
2 roma tomatoes, seeds removed and diced
1 bunch scallions, thinly sliced
1 cup fresh lime juice
1 orange, cut into segments (removing the white skin between each one)
1 grapefruit, cut into segments (removing the white skin between each one)
1 can coconut milk
1/2 cup cilantro, chopped
1 jalapeno, seeded and minced (add less or more depending on your spice level preference)

soak the diced scallops in the lime juice for about 20 minutes.  drain about 1/2 the juice off and set aside.  add the rest of the ingredients including the orange, grapefruit and coconut milk.  season with salt and pepper.  add more lime juice if needed.
